Lemon Blueberry & Walnut Cake
A berry-licious dessert for any special gathering!
INGREDIENTS: 1 packet Country Home Creations Blueberry Walnut Dip Mix 1 18-ounce package lemon cake mix (pudding in mix type) 2 eggs 1-1/4 cups water 1/3 cup vegetable oil 1 cup sour cream GLAZE: 1 cup powdered sugar 1 tablespoon lemon juice or 1 teaspoon vanilla extract 1 to 2 tablespoons milk (to reach desired consistency)
DIRECTIONS: Preheat oven to 350 degrees F. Grease a bundt or tube pan. In a medium mixing bowl, place ALL ingredients except Blueberry Walnut Dip Mix. Blend on low speed with an electric mixer until combined, then mix on medium speed for 1 minute. Add Blueberry Walnut Dip Mix and stir in by hand to mix well. Pour battered into greased bundt pan. Bake for 45 to 55 minutes, or until done. Cake is done with top springs back to touch or toothpick is inserted and comes out clean. Cool slightly in pan and then invert onto a serving plate. Pour glaze over warm cake.
